Porter Consulting has teamed with the University of Connecticut (UConn) over the past few years and designed several different foodservice concepts on campus. The Towers all-you-care-to-eat dining facility, opened in the Fall 2003, is a contemporary, state-of-the-art dining venue that offers a wide variety of menu items including grilled foods, Italian specialties, pizzas from a wood-burning stove, fresh salads and wraps and more. The Towers dining facility also operates a full Kosher kitchen, a separate coffee shop and an after-hours, take-out window.
Porter Consulting also worked with UConn to develop a marche-style food court venue in the Student Center. This facility opened in the Fall of 2006 and serves as a central dining area and catering facility on campus. The design for the Student Center was based on the extensive Porter Process, which uses qualitative and quantitative market research to determine long-term planning, programming and design parameters. Also, on the first floor is space for three retail food concepts for which the University sent out an RFP to prospective providers. Porter Consulting assisted the University’s Dining Services with their response to this public request. We designed models for three original concepts including Burger Works, Fire Wok and Vermont Subs. |
