conducted full foodservice master plan and formal Request
for Proposal services for Utica College in 2003-2004.
In Phase I, Master plan services included qualitative
and quantitative market research (focus groups, personal
interviews and a web-based campus-wide dining survey),
analysis of existing conditions and development of a
master plan in keeping with the University’s future
needs and goals. Foodservice programmatic recommendations
were short term and long term and addressed meal plans,
concepts (branded, non-branded), operating hours, catering
policies and operations, business systems, and potential
renovations.
Upon completion
of defining the recommended foodservice program, our
firm began Phase II, contract negotiations with the
incumbent. We successfully renegotiated the University’s
foodservice contract with its existing foodservice contractor
for the remaining year of its contract with the University
prior to issuance of the formal RFP. During Phase III,
Porter Consulting conducted a formal Request for Proposal
process for the re-bid of Utica College’s campus
wide foodservices. This encompassed development and
issuance of the RFP through successful contract negotiation
with the contractor awardee.
