Porter Consulting developed a comprehensive study and design program to guide the renovation of the foodservice operations and support spaces in the business school, Dougherty Hall and the Connelly Center on the Villanova Campus. The goals of the programming study included: developing a state-of-the-art foodservice facility to serve as a model of operational, labor, and environmental efficiency; to meet the financial performance objectives of Villanova; and to develop a facility offering a mix of foodservice concepts that will serve students, faculty, staff, and visitors of Villanova well into the future.
The programming document included a complete description of new dining concepts, financial projections, an inventory of all existing foodservice equipment, a demand analysis for each dining unit, a schematic design for foodservice and non-foodservice spaces for each unit, and a phasing plan for capital budgeting design and construction. As part of our work, we identified several environmentally-friendly manufacturers of service equipment and systems.
Since completing the programming, Porter Consulting has completed additional projects at Villanova, all of which served to determine the viability of creating a central production facility for the University. Our team conducted a capital renewal master plan, providing the University with an equipment and facility replacement plan and timeline. We also tested the cost-benefit of creating a central production facility for the campus. Green space is an important part of life at Villanova, and the University requested that the central production facility be located underground, linking Dougherty Hall to the Connelly Center. |
