Our firm assisted with the design of the exciting new East Commons dining facility that opened in Fall 2004. The lower level includes a full production facility that serves as a commissary and catering kitchen and supports many of the other campus food venues. Also on the lower level of the venue is a Cyber Café, a full-service coffee bar that offers a wide variety of baked goods baked on site along with parlor-style ice cream, made-to-order deli-style subs and a selection of prepackaged snacks and beverages. This area has a walk-up, carry-out station which provides quick service for students on the go as well as exterior storefront window seating.

The upper level (main level) has a support kitchen with multiple cooking lines and state-of-the-art equipment, separate prep areas for cooks and bakers, and a large, dry storage and refrigerator area that is back fed to the preparation areas. The support kitchen allows Dining Service personnel to stage food items for delivery to other areas of the building.

The main servery is designed to be interactive and welcoming. Customers get a panoramic view of the servery from all entry points. Food stations inside include: a deli wrap station with Panini grill offerings; a self-service hot bar with ethnic dishes; a vegetarian station with steamed veggies and other items cooked in front of patrons; stir fry and omelet stations; a station called “Traditions,” which serves comfort foods; a salad area with both made-to-order entrée salads and a self-service salad bar; and a home-style Italian station with both pizza and baked pasta dishes. In addition to hot food items, there are also ice cream and made-to-order smoothie stations, and several self service beverage stations with soda, juice, tea and coffee.

Our team designed each station within this venue to dramatically reduce queuing and cross traffic problems while maintaining an extensive variety of choices. The tray drop off area has been secluded for redirecting cross traffic to a hidden area that will not interfere with the intended ambiance of the servery.
